Cook, uncovered, for approximately one minute. After flipping the breasts, turn down the heat. Put a tight-fitting lid on the pan. After setting a 10-minute timer, turn away.
Turn off the heat after ten minutes, but keep the lid on and set a new timer for ten more minutes. Again, turn away. Check to see whether it’s done after 10 minutes; it should only be cooked through.
En Papillote
Set oven temperature to 425 degrees Fahrenheit. Cut out two circles of parchment, about 12 inches in diameter, and fold in half.
After inserting a spiced chicken breast into each, start at one end and tightly fold and crimp the ends of the top and bottom pieces of parchment paper together to create a seal.
This will result in two sealed packets, each holding a single breast. Transfer the chicken to a rimmed baking sheet and bake for 14 to 18 minutes, or until it puffs up. Before serving, ensure sure the chicken is cooked through.

This is all the time the chicken breasts need to take in enough moisture to let them withstand the grill’s heat without drying out.
